Are you looking for a quick, easy and nutritious way to start your day? Try our creamy Blueberry Surprise Smoothie to get you out the door in a flash.

Pretty, petite, and plump with juice, blueberries are a powerhouse fruit.  Packed with antioxidants, they help to regulate blood sugar levels, improve vision and even have cancer fighting properties.   A simple and healthy way to get all these amazing benefits on the go is in a breakfast smoothie.

The “surprise” in this recipe is the addition of avocado. Avocados are another super fruit known for their creamy texture and as the main ingredient in guacamole.  But did you also know that the average avocado contains around 4 grams of protein and 11 grams of fiber?  They are also packed with potassium and a whole slew of vitamins and minerals, including vitamins A, B, C, and E.  The high levels of monounsaturated fat, mostly oleic acid, have even been known to help lower bad cholesterol in your blood and reduce the risk for strokes and heart disease.

Don’t worry about the avocado changing the flavor of your smoothie. I promise it will not taste like guacamole! It just adds the right amount of creaminess and helps to keep you full and satisfied for the whole morning. This is a great breakfast drink but also a nutritious after-workout pick me up.

A couple of tips:

  • Always use frozen berries. This helps to keep your smoothie cold without using ice cubes.
  • I like to make a smoothie when I first wake up, put it in a mason jar, then throw it in the freezer while I am getting ready.  This makes it extra cold and allows me to sip on it all morning long.
  • There are many amazing protein powders on the market. I am currently using the Vega One line. Created by a professional Ironman Triathlete, it is 100% vegan and packed with protein, omega-3’s, antioxidants and super greens.
  • When mixing in the blender, start with the frozen blueberries and avocado on the bottom.  Then add protein powder and liquid.  This will keep the powder from sticking to the bottom.  You don’t want to lose any of the powder’s nutritional benefits.
